Yesterday I wanted to create something new, healthy, and delicious! I decided I’d give a try creating a Raw Stuffed Bell Pepper recipe! After soaking the seeds, I started making it, and it was so easy!!
Meal Type: Dinner
What You Need:
Food Processor
Medium Size Bowl
Spatula
Spoon
4 Bell Peppers, any color
1 cup Sunflower Seeds, soaked for 4-6 hours
1/4 cup water
1/2 tsp chili powder
1 tsp paprika
1 tsp ground cumin (preferably ground by hand)
2 tbsp Bragg® Apple Cider Vinegar
1 Avocado, cubed
1/4 red onion
3/4 cup chopped celery
3/4 tsp Celtic Sea Salt
Cilantro Sprigs, otional
Sliced Jalepeño, otional
Instructions:
Blend soaked sunflower seeds and water in food processor until you have a pâté. Scrape down sides until you have the desired consistency. Add vinegar, sea salt, chili powder,paprika, and cumin and process again.
Transfer mixture to a bowl, and stir in celery and red onions. Gently fold in avocado cubes.
Cut tops off of bell peppers, and remove seeds and membranes. Spoon the sunflower seed mixture into the peppers.
Top with optional ingredients, and serve.
Additional ingredients to add to the mixture could be: black olives, jalepeños, corn, etc.
Condiments that go great with these are: hot sauce, and crushed red pepper.
To create a Raw Vegan Meal, include: cauliflower rice, Spicy Tomato Soup, or a simple salad.
