Raw Vegan Scrambled Non-Eggs (Avocado)

Who likes scrambled eggs? Some people do, some people don’t. I used to like scrambled eggs, although I didn’t have them very often. This recipe is very similar to scrambled eggs! Plus, you can add whatever you want to it!

1 Serving

What You Need:



cutting board

1 ripe Avocado

1 tomato (whatever type you like)

1 tsp Celtic or Pink Sea Salt

2 tsp Nutritional Yeast

Freshly ground black pepper

2 tsp curry powder, optional

1/2 tsp crushed red pepper, optional



Cut avocado in half. Remove seed. Cube both halves, and squeeze or scoop out into bowl.

Dice tomato andadd to avocado.

Add the salt, nutritional yeast, black pepper, curry powder, crushed red pepper, and whatever other seasonings you wish. Mix the mixture up, and its ready to eat!



Additional ingredients could be: a little bit of Apple Cider Vinegar, marinated mushrooms, sauteed onions, etc.

This can be eaten by itself, or served with: Healthy Vegan Spiralized Hash Browns, Gluten-Free Toast, or Gluten-Free Crackers.
