California rolls and Sushi have always been in my top favorite foods, after Indian Curry, and a few Mexican dishes, but I always get the vegan options of sushi or California rolls at Asian buffets. I know a lot of other people love sushi, and it may be a reason they don’t want to go Vegan. No worries! I’ve got you covered!
Serves: 3 (makes 6 Sushi rolls)
What You Need:
Sushi Mat
Knife
1 cup Sushi rice, cooked
Raw Nori Sheets
Hummus
Avocado, sliced
Zucchini, sliced
Celery, sliced
Instructions:
Lay one Nori sheet on Sushi mat. After rice is cooked, use a fork (or fingers) to make a layer of rice about 1/4 in thick. This rice is sticky, so if you use your fingers, wet them before handling the rice.
Take a knife and spread a small portion of the side closest to you with hummus. Then, add the avocado, zucchini, and celery next to each other.
Roll the Nori with the Sushi mat.
Using a sharp knife, cut the sushi roll in sections about 1 inch thick.
Serve with Coco Aminos!
Other ingredients you can use instead of the ones listed are: cucumber, vegan cream cheese, sliced peppers, ect.
Great as a small meal, or snack!
