This is a meal in itself, and is delicious! My stepdad makes this all the time, and we love it! The recipe is originally Cypriat Turkish , but has been adapted over the years. If you like soft potatoes and greens, you’ll love this!
Serves: 4
What You Need:
Steamer
Knife
Cutting Board
Large Bowl
Approx. 2lbs Potatoes (we like golden)
Any Type of Greens you Wish! (We like Kale and Beet Greens)
Juice of a lemon
3 tbsp. Apple Cider Vinegar
Salt, to taste
Olive Oil, to taste
Instructions:
Dice the potatoes into even cubes. Fill your steamer with water, and put the potatoes in. Steam them for 20-40 min, or until you can stick a fork in them easily.
Once potatoes are done, pour them into a large bowl. If you are using greens that have a thick stem (i.e. kale or beet greens, etc.) chop them up. Put them in the steamer for 5 min.
Once greens are done, mix them in with the potatoes.
Add in the other ingredients, mix and serve!
This meal is great hot or cold.
This can also be served as a side dish at a pot luck.
Great additions to this are: raw onion, gluten free bread dipped in olive oil, etc.
