Who loves some kale?? I love some kale! And when you mix it up with some other raw veggies and quinoa, it’s the BEST! This recipe is quick, simple, and filled with lots of nutrition and protein! Enough chit-chat, let’s do it!!
This recipe is: Vegan, Soy-free, Gluten-free, Oil-free
Serves: 3-4
What you need:
1 Bunch green kale
2 bell peppers (any color)
1 red onion
3 roma tomatoes
1 1/2 cup quinoa
3 cups purified water (find out why “purified” here)
Juice of 1 lemon
Rosemary, optional
Directions:
Start cooking the quinoa as directed on the package.
While quinoa is cooking, start cutting up all the veggies. You can roughly chop the kale (including the stems), and dice all the other veggies. Put them all in a big bowl.
The quinoa is probably done by now, or has been ready for a while. 🙂
You can now mix the quinoa in with the kale and other vegetables.
Pour the juice of the lemon over the top and toss it together with t he salad.
Okay, its done, and ready to be eaten!
You can eat this right away, or make it a day ahead of time. I wouldn’t make it to many days ahead of time, though, because the kale and veggies might start to get slime-y.
