Pizza is a big thing for people to give up when going vegan. There are many vegan pizzas on the market, but they’re not very healthy for you, and have many chemicals to make the cheeze on the pizza, taste like cheese. Well, this pizza does not contain chemicals, soy, gluten, or anything like that! It does contain cashews.

This Recipe is: Vegan, Gluten-Free, Soy-Free
Serves: 4
What You Need:
For the Vegan Mozzarella:
1/4 cup Cashews
1 cup purified water (find out why “purified” here)
3 tbsp + 2 tsp tapioca flour (aka tapioca starch)
1 tbsp Nutritional Yeast
1 tsp Apple Cider Vinegar
1/2 tsp salt
1/4 tsp garlic powder
For the Pizza:
Pizza or Pasta Sauce
Mushrooms, thinly sliced
Green Peppers, thinly sliced
Black olives, seeded
Directions:
First make the Easy Gluten-Free Pizza Crust.
As that is baking, slice the veggies.
When it is done baking, spread a thin layer of pasta/pizza sauce on the crust, then place the veggies on the sauce. You want to make sure you’re not putting too much weight on it because the crust is very thin.
Now, blend all ingredients for the mozzarella in a blender, until smooth. Then pour into a small pot, and heat on medium-high, constantly stirring. It will begin to thicken, and once it is separating from the pot, spread it on top of the pizza.
Bake at 400° F for 30 minutes, or until the cheeze start to get bubbly and brown.
Cut, and enjoy!
