A childhood favorite! Chili Mac. My dad would serve leftover chili on some macaroni or spaghetti noodles! I thought it was so clever, and it still is. It’s so simple, super good, and now I’ve just veganized it! 🙂
What you need:
Left over chili (or make a really simple version here and add the spices)
16 oz. Gluten Free Pasta (I love Rotini, but whatever you like will do!)
Heat up or cook the chili.
While that is heating or cooking, cook the GF pasta according to package.
Serve in a bowl with the chili on top of the pasta.
Additional toppings: nutritional yeast, vegan sour cream
You will absolutely love this, and its perfect for a leftover night, or lazy night!
