Vegan Sammy [GF, Soy-Free]

We all love a sandwich. Its a simple lunch to take to work, or just eat at home, and the vegan version is even simpler! This is gluten-free is you use GF bread, so make sure you get that!

Makes: 1 sandwich

What you Need:

2 slices Gluten-Free Vegan Bread (I like Food For Life brand)

1/2 ripe avocado

red pepper, sliced

cucumber, sliced

tomato, sliced

red onion, sliced

salt and pepper to taste

Directions:

  1. Smash up the 1/2 avocado and use to spread on the bread.
  2. Next layer everything (as much as you want) on top of the avo spread.
  3. Place other slice on top.
  4. Cut, and serve!

 

Serve with fresh veggies, or a simple salad!
