We all love a sandwich. Its a simple lunch to take to work, or just eat at home, and the vegan version is even simpler! This is gluten-free is you use GF bread, so make sure you get that!
Makes: 1 sandwich
What you Need:
2 slices Gluten-Free Vegan Bread (I like Food For Life brand)
1/2 ripe avocado
red pepper, sliced
red onion, sliced
salt and pepper to taste
- Smash up the 1/2 avocado and use to spread on the bread.
- Next layer everything (as much as you want) on top of the avo spread.
- Place other slice on top.
- Cut, and serve!
Serve with fresh veggies, or a simple salad!
