Yesterday, I decided to try something new. Our beets needed to be used, but I didn’t just want to steam them with potatoes. I wanted something new a different. So, I made these. They turned out so well. They are probably the best veggie burgers I have made, so far.
Yields: About 4 Large Burgers
What You Need:
1 1/2 cups shredded beets
3/4 cup quinoa
1 1/2 tsp rosemary
1 1/2 tsp cumin
1 1/2 tsp crushed red pepper
1 1/2 tsp ground pepper
Instructions:
Preheat oven to 375°
Cook quinoa as directed. Shred beets in a food processor, or on a grater. Use food processor to process all ingredients, scraping down when needed.
Either use a burger press, or your hands to make patties.
Cook for 40-45 min in oven, without flipping.
Enjoy!
